CAREGIVER MEAL PREP

1. Baked potato soup

Ingredients:

  • 4 Potatoes (about 1 1/2lb) peeled and diced into 1/2” pieces

  • 1 Yellow Onion, diced

  • 4 Tbsp of All Purpose Flour

  • 4 Tbsp of Unsalted Butter

  • 8 Slices of Bacon 3 cups of Chicken Stock

  • 3 cups of Whole Milk

  • 1/2 cup of Sour Cream

  • 1 1/2 cups of Shredded Sharp Cheddar Chopped Green Onions

  • Salt and Pepper, to taste

2.BROCCOLI CHEDDAR SOUP

Ingredients:

  • 1/2C Butter

  • 1 diced onion

  • 1 minced garlic clove

  • 1/2C flour

  • 4C chicken broth

  • 24oz shredded cheese

  • 1qrt half n half (or 2Cs milk + 2C Heavy cream)

  • 3 grated carrots 1lb broccoli florets chopped

  • Salt/pepper to taste

  • Pinch (less than 1/8th tsp) cayenne

3. fRENCH TOAST

Ingredients:

  • 6 sliced Texas toast or thick cut bread

  • 2 large eggs

  • 1/4 cup milk or cream

  • 1 tsp sugar

  • 1/4 tsp cinnamon pinch of salt

  • splash of vanilla extract butter and

  • vegetable oil for cooking

4.cLAM CHOWDER

Ingredients:

  • 6 slices bacon, cut into 1/2″ strips.

  • 2 medium carrots, sliced into thin rings or half rings

  • 2 celery ribs, finely diced

  • 1 small onion, finely diced

  • 4 Tbsp all-purpose flour

  • 2 cups chicken broth or stock

  • 1 cup chopped clams with their juice (from 2 small cans)

  • 1 bay leaf

  • 1 1/2 tsp Worcestershire sauce

  • 1/2 tsp Tabasco sauce

  • 1/2 tsp dried thyme

  • 1 1/2 tsp salt and 1/4 tsp black pepper, or to taste

  • 1 1/2 lbs (6 medium) potatoes (Yukon gold or russet), peeled

  • 2 cups milk (any kind)

  • 1 cup whipping cream or heavy whipping cream

1.CUCUMBER TOMATO AVOCADO

Ingredients:

  • ►1 lb Roma tomatoes

  • ►1 English cucumber

  • ►½ medium red onion, sliced

  • ►2 avocados, diced

  • ►2 Tbsp extra virgin olive oil or sunflower oil

  • ►Juice of 1 medium lemon (about 2 Tbsp)

  • ►¼ cup (1/2 bunch) cilantro, chopped

  • ►1 tsp sea salt or ¾ tsp table salt

  • ►⅛ tsp black pepper

2. GREEK SALAD

Ingredients:

  • For the Dressing

  • 1/4 cup olive oil extra virgin

  • 3 tbsp red wine vinegar

  • 2 tbsp lemon juice

  • 2 tbsp lemon zest

  • 1 tbsp honey mustard

  • 3 tbsp oregano leaves crushed

  • 1 tbsp thyme leaves

  • 1 1/2 tsp salt

  • 1/2 tsp black pepper

  • For the Salad

  • 1 English cucumber large

  • 1 bell pepper

  • 3 tomatoes cut in wedges

  • 1/2 cup Kalamata Olives

  • 1/2 cup red onion thinly sliced

  • 7 oz feta crumbled

  • 1 sprig oregano

3. ceaser salad

Ingredients:

  • For the croutons

  • 3 slices white bread, cut into cubes

  • 1 tbsp olive oil

  • 1 tbsp garlic, crushed

  • 1 tsp parsley, chopped

  • 1 tsp black pepper

  • 1 tbsp Parmesan cheese, grated

  • For the dressing

  • 1 cup vegetarian mayonnaise

  • Salt to taste

  • Pepper as required

  • 1 tbsp parsley, chopped

  • 1 tbsp garlic, chopped

  • 1/4 th cup Parmesan cheese, grated

  • 3 tbsp chilled water For the assembly

  • 2 bunches romaine lettuce Croutons Dressing

  • 2 tbsp Parmesan cheese, grated
